AGE Database Introduction

Welcome to our AGE database

To stimulate a more factual discussion about the occurence and the daily uptake of advanced glycation endproducts (AGEs) we are collecting data from chemical analysis of food, which are result of selective analytical methods for individual reaction products. Our aim is to provide a solid base of analytical data.

Instructions

We organised the data in four main levels.

level 0: food categories for which data is currently available

A click on the food category leads to the corresponding level 1

level 1: specifies products within food categories and gives ranges for all included AGEs

The number of data points is given in brackets

To reach level 2 click on a product of interest

To access further levels a free registration is required. Please contact:
age.database(at)chemie.tu-dresden.de

level 2: shows data for individual food samples and the author who provided it

To get method information of level 3 click on a data point

level 3: shows the analytical method applied and the corresponding reference
